- 2 cups All purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 2 teaspoons Ground cinnamon
Wet Ingredients
- 2 large Eggs
- 3/4 cup Granulated sugar
- 1/4 cup Brown sugar, packed
- 1/2 cup Oil (vegetable or canola)
- 2 teaspoons Vanilla extract
- 2 cups Zucchini, grated (About 2 cups lightly packed)

Preparation
- Preheat the oven to 350°F (175°C) and grease a 9×5 loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
- Stir the grated zucchini into the wet mixture.
- Add the dry ingredients to the wet ingredients and stir just until combined, avoiding overmixing.
- If desired, fold in add-ins like nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 50 to 65 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow the loaf to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For added flavor, consider optional add-ins such as nuts, chocolate chips, or raisins. If preparing for a lighter option, substitute half the flour with whole wheat flour.
