- 1 teaspoon Baking powder
- 1/4 teaspoon Salt (Use less if using salted butter.)
Wet Ingredients
- 1 cup Butter (Real butter preferred for flavor.)
- 1 cup Granulated sugar
- 1 large Egg
- 1 teaspoon Vanilla extract
- 1/4 cup Strawberry puree (Cooked until thick for best results.)
- 1/3 cup Freeze-dried strawberry powder (Crushed into a powder.)
Instructions
Preparation
- Heat the oven to 350 F (175 C) and line a baking sheet with parchment paper.
- In a bowl, cream together the butter and sugar until fluffy and light in color.
- Add the egg and vanilla, then mix in the cooled strawberry puree and powder.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until combined.
- Chill the dough for at least 20-45 minutes.
Baking
- Scoop dough into balls and place them about 2 inches apart on the baking sheet.
- Bake for 9-12 minutes, until edges are set but centers are slightly underdone.
- Let cool on the baking sheet for 10 minutes before transferring to a wire rack.
Notes
For decorating, consider adding an easy strawberry glaze or buttercream. Experiment with flavors like lemon zest or white chocolate chips for variations. Store cookies in an airtight container at room temperature for up to 4 days.
