- 8 oz Cream cheese, softened (Use full fat for best texture)
- 4 oz Feta cheese (Crumbled)
- 1 cup Green olives, chopped (A mix of Castelvetrano and Manzanilla is recommended)
- 1 tbsp Olive brine or lemon juice (To loosen and brighten the dip)
- 1 clove Garlic, minced (Fresh, paste, or powdered)
- 1 tbsp Olive oil (For richness)
- to taste Black pepper (Optional chili flakes can be added)

Preparation
- Let the cream cheese sit out for 20 to 30 minutes to soften.
- Chop the olives into a mix of finely chopped and slightly chunky pieces.
- In a bowl, mix the cream cheese and feta until mostly smooth. A fork works fine, but a hand mixer will make it creamier.
- Add the chopped olives, olive brine (or lemon juice), garlic, black pepper, and olive oil.
- Stir again and taste. Adjust seasoning by adding more feta, brine, or olive oil as needed.
- Chill the dip for at least 20 minutes to let the flavors settle.
- For a smoother texture, pulse the mixture in a food processor instead of stirring by hand.
Notes
This dip is great for make-ahead. It can be stored in an airtight container for up to 2 days. Best served within 3 to 4 days.
