  • 1 lb Ground beef (or your preferred protein) (Lighter proteins like ground turkey or chicken can be used.)
  • 1 medium Onion (yellow or white), diced
  • 2-3 cloves Garlic, minced or garlic powder
  • 2 tbsp Taco seasoning (Can be store-bought or homemade.)
  • 1 cup Rice (white rice recommended)
  • 2 cups Chicken broth or beef broth (Water can be used, but broth adds more flavor.)
  • 1 cup Tomato sauce or salsa
  • 1 can Beans (black beans or pinto), drained and rinsed
  • 1 cup Corn (optional) (Adds sweetness.)
  • 1 cup Shredded cheese (cheddar, Colby Jack, or Mexican blend)
  • to taste Salt and pepper (Season according to preference.)

Instructions

Preparation

  1. Heat a large skillet on medium heat. Add a little oil if the beef is very lean.
  2. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain extra grease if necessary.
  3. Stir in garlic and taco seasoning. Cook for about 30 seconds until aromatic.
  4. Add rice, broth, and tomato sauce (or salsa). Stir well and bring to a gentle simmer.
  5. Cover and cook until the rice is tender, usually around 15 to 18 minutes.
  6. Stir in beans (and corn if using). Cover again for 2 to 3 minutes to heat through.
  7. Turn heat low and sprinkle cheese over the top. Cover until melted, then serve.
