  • 1 tbsp smoked paprika (Optional but adds great flavor.)
  • to taste salt and pepper (Season as desired.)
  • 1 tbsp oil or butter (For cooking chicken and aromatics.)

Optional Ingredients

  • 1 cup bell peppers, diced (Add with the onion for extra flavor.)
  • 1 cup corn (Can be added with the onion.)
  • 1 cup black beans (For added protein and fiber.)
  • 1 cup shredded cheese (Can be stirred in at the end.)

Instructions

Preparation

  1. Pat the chicken dry, then season with salt, pepper, and smoked paprika.
  2. Heat oil in a large deep skillet over medium-high heat and sear the chicken for about 2-3 minutes per side.
  3. Remove chicken from the skillet and set aside.

Cooking Steps

  1. Reduce heat to medium, add more oil if needed, and cook chopped onion for about 2 minutes.
  2. Add garlic and stir for 30 seconds until fragrant.
  3. Add the rice to the pan and stir for 30-60 seconds to toast.
  4. Stir in the BBQ sauce and honey, then pour in the chicken broth, scraping the bottom to release browned bits.
  5. Nestle the chicken back into the mixture, cover, and simmer on low heat for about 18-22 minutes.
  6. Let rest covered for 5 minutes, then fluff rice with a fork.

Notes

For extra saucy rice, drizzle a little more BBQ sauce before serving.
