- 1 cup white long-grain rice (Other types of rice may require adjustments in cooking time.)
- 1/2 cup BBQ sauce (Use your favorite flavor, sweet and smoky is recommended.)
- 1/4 cup honey (For a sticky glaze.)
- 2 cups chicken broth (Adds flavor while the rice cooks.)
- 1 medium onion, chopped (Provides a flavor base.)
- 2 cloves garlic, minced (Enhances the dish’s flavor.)
- 1 tbsp smoked paprika (Optional but adds great flavor.)

- 1 tbsp oil or butter (For cooking chicken and aromatics.)
Optional Ingredients
- 1 cup bell peppers, diced (Add with the onion for extra flavor.)
- 1 cup corn (Can be added with the onion.)
- 1 cup black beans (For added protein and fiber.)
- 1 cup shredded cheese (Can be stirred in at the end.)
Instructions
Preparation
- Pat the chicken dry, then season with salt, pepper, and smoked paprika.
- Heat oil in a large deep skillet over medium-high heat and sear the chicken for about 2-3 minutes per side.
- Remove chicken from the skillet and set aside.
Cooking Steps
- Reduce heat to medium, add more oil if needed, and cook chopped onion for about 2 minutes.
- Add garlic and stir for 30 seconds until fragrant.
- Add the rice to the pan and stir for 30-60 seconds to toast.
- Stir in the BBQ sauce and honey, then pour in the chicken broth, scraping the bottom to release browned bits.
- Nestle the chicken back into the mixture, cover, and simmer on low heat for about 18-22 minutes.
- Let rest covered for 5 minutes, then fluff rice with a fork.
Notes
For extra saucy rice, drizzle a little more BBQ sauce before serving.
