A comforting and easy one-pan dinner featuring roasted sausage, green beans, and potatoes, perfect for busy weeknights.
Ingredients
Main Ingredients
- 1 lb smoked sausage or kielbasa, sliced into coins (Any preferred sausage can be used.)
- 1 lb baby gold potatoes or red potatoes, halved or quartered (Yukon golds or russets can work as well.)
- 1 lb fresh green beans, trimmed (Frozen can be used but will release more water.)
- 2 Tbsp olive oil (Use enough to coat everything lightly.)
Seasonings
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt (Adjust to taste.)
- 1/2 tsp black pepper (Adjust to taste.)
Optional Ingredients
- 2 cloves minced garlic (Optional for additional flavor.)
- 1 Tbsp lemon juice (A squeeze at the end adds brightness.)
- 1/4 tsp red pepper flakes (For added heat, optional.)
Instructions
Preparation
- Preheat your oven to 425 F. Line a sheet pan with foil or parchment for easier cleanup.
- In a large bowl, toss the halved potatoes with olive oil, salt, pepper, garlic powder, onion powder, and paprika. Spread them cut side down on the prepared sheet pan.
- Roast the potatoes alone in the preheated oven for about 15 minutes.
- Add the sliced sausage to the pan, stirring to combine. Roast for another 10 minutes.
- Add the trimmed green beans, drizzle with a bit of olive oil and season with salt and pepper. Roast for an additional 10 to 12 minutes, until the beans are bright and the potatoes are tender.
- Taste and adjust seasoning, finishing with lemon juice or red pepper flakes if desired.
Notes
Not overcrowding the pan helps achieve crispiness.
