- Pat the chicken dry and season with salt, pepper, paprika, and thyme.
- Heat oil or butter in a large skillet over medium-high heat. Add the chicken and brown for about 3 to 4 minutes on each side. Remove to a plate.
- In the same skillet, add the diced onion and stir for 2 minutes. Add the minced garlic and stir for another 30 seconds.
- Add the uncooked rice and stir for about 30 seconds to coat with pan juices.
- Pour in the chicken broth and scrape the bottom gently to lift the browned bits.
- Nestle the chicken back on top. Bring to a gentle simmer, then cover and reduce heat to low.
- Cook for 15 to 18 minutes, or until the rice is tender and chicken reaches an internal temperature of 165°F.
- Turn off heat, let sit covered for 5 minutes, then fluff rice with a fork. Add peas or spinach right at the end. Finish with a squeeze of lemon if desired.
