Description

Delicious and fluffy protein pancakes that are simple to make and perfect for a filling breakfast.


Ingredients

Main Ingredients

  • 1 medium ripe banana (for sweetness and moisture)
  • 2 pieces eggs
  • 1 scoop protein powder (about 25 to 30g)
  • 1/2 cup oats (quick oats or rolled oats)
  • 1/2 tsp baking powder
  • 1/3 cup milk (dairy or non-dairy, add more as needed)
  • 1 tsp vanilla (optional but highly recommended)
  • a pinch salt
  • as needed butter or oil (for the pan)


Instructions

Preparation

  1. Blend the banana, eggs, oats, milk, vanilla, salt, and baking powder until smooth.
  2. Add the protein powder and blend again just until combined. Don’t overdo it.
  3. Let the batter sit for 2 minutes. This helps the oats hydrate and the batter settle.

Cooking

  1. Heat a nonstick pan on medium to medium low and lightly grease it.
  2. Pour small circles of batter. These cook better than giant pancakes.
  3. Cook for 2 to 3 minutes until you see bubbles and the edges look set, then flip.
  4. Cook another 1 to 2 minutes and remove to a plate.

Notes

For best results, keep the heat lower, allow the batter to rest, and make smaller pancakes for even cooking. These can be easily customized with different flavors or ingredients.
