A deliciously spicy twist on classic grilled cheese, featuring a creamy jalapeño popper filling melts inside crispy bread.
Ingredients
For the filling
- 2 medium fresh jalapeños (Roasted and chopped)
- 4 oz cream cheese (Softened)
- 1 cup sharp cheddar cheese (Shredded)
- 1 cup Monterey Jack cheese (Shredded)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
For the sandwich
- 4 slices bread (Texas toast or sourdough)
- 2 tbsp butter or mayo (For grilling)

Preparation
- Roast your jalapeños until the skin blisters and the peppers soften. Let them cool, then chop.
- Mix the softened cream cheese with chopped roasted jalapeños, shredded sharp cheddar, shredded Monterey Jack, salt, garlic powder, and onion powder.
Sandwich Assembly
- Butter or mayo the outside of each bread slice.
- Spread the jalapeño cream cheese mixture on the inside of the bread.
- Add extra shredded cheese if desired.
- Close the sandwich.
Cooking
- Grill the sandwich in a skillet over medium-low heat until toasted and the inside melts.
- Cover the pan briefly if needed to help the cheese melt.
- Rest the sandwich for a minute before slicing.
Notes
You can use an air fryer to roast the jalapeños and toast the sandwich. Keep the heat medium low to avoid burning the bread before the cheese melts. For variations, mix in more spices or swap with crumbled sausage for a different flavor.
