Ingredients

For the pizza crust

  • 1 pound store bought pizza dough or pre-baked pizza crust (or flatbread style crust)

For the sausage gravy

  • 1 pound breakfast sausage (pork or turkey)
  • 3 tablespoons flour (for thickening gravy)
  • 2-2.5 cups milk (whole milk for richness)

  • optional garlic powder

For the toppings

  • 5-6 large eggs (scrambled soft)
  • 2-3 cups shredded cheese (blend of mozzarella, cheddar or preferred cheeses)
  • optional green onions, cooked bacon, diced bell pepper, hot sauce, red pepper flakes (for extra toppings)


Instructions

Preparation

  1. Cook the sausage in a large skillet over medium heat, breaking it up into small crumbles until there is no pink left.
  2. Sprinkle the flour over the sausage and stir for about 1 minute, then slowly pour in the milk while stirring continuously. Cook until it thickens, about 4 to 6 minutes.
  3. Season with salt and black pepper. If needed, adjust seasoning to taste.

Assembling the pizza

  1. Prep the crust by stretching raw pizza dough onto a greased baking sheet or pizza pan, poking a few holes with a fork.
  2. Par bake the crust for 5 to 7 minutes at 450°F to ensure it can hold the toppings.
  3. Spread a generous layer of sausage gravy over the crust, leaving a small edge for the crust border.
  4. Sprinkle on the shredded cheese blend.
  5. Scramble eggs softly and add them on top of the cheese.
  6. Finish with optional toppings like bacon bits or green onions.

Baking

  1. Bake at 450°F for an additional 8 to 12 minutes, or until the cheese is melted and the crust is golden.

Notes

Let the pizza sit for about 3 minutes after baking to help slices hold together. Keep the gravy slightly looser before baking as it thickens in the oven.
