A creamy and crunchy chicken salad that captures the classic flavors of a BLT sandwich, perfect for picnics and quick meals.


Ingredients

  • 2 cups cooked chicken, chopped (Rotisserie chicken works well.)
  • 6 slices bacon, cooked until crisp (Crispy bacon is preferred.)
  • 4 cups chopped romaine lettuce (Iceberg can also be used.)
  • 1 cup grape or cherry tomatoes, halved (Less watery than larger tomatoes.)
  • 1/2 cup mayonnaise (Use your favorite type.)
  • 1/2 cup Greek yogurt (optional) (For a lighter feel.)
  • 1 tablespoon lemon juice (Adds brightness.)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (To taste.)
  • 1 teaspoon black pepper (To taste.)
  • 1/4 teaspoon smoked paprika (optional) (For added flavor.)
  • 1/4 cup green onions, chopped (optional) (For additional texture.)
  • 1/2 cup celery, chopped (optional) (For added crunch.)
  • 1 medium avocado, diced (optional) (For added richness.)


Instructions

Preparation

  1. Cook the bacon until crispy, then let it cool and crumble it.
  2. Chop the chicken into bite-sized pieces.
  3. In a large bowl, stir together the mayo, Greek yogurt (if using), lemon juice, garlic powder, salt, and pepper.
  4. Add the chicken and toss until coated.
  5. Fold in the tomatoes, chopped lettuce, and most of the crumbled bacon.
  6. Taste and adjust seasoning as needed with more lemon, salt, or pepper.

Notes

For best texture, keep chopped lettuce and crumbled bacon separate until just before serving. BLT Chicken Salad can be served in wraps, on toasted bread, in lettuce cups, or with crackers.
