Ingredients
For the Chicken
- 4 cutlets Chicken cutlets (Thin is best, or slice chicken breasts in half.)
- 1 cup Seasoned breadcrumbs or plain breadcrumbs plus Italian seasoning
- 1/2 cup Parmesan cheese (For the breading and for sprinkling.)
- 2 large Eggs (To help the crumbs stick.)
- 1/4 cup Flour (A light dusting helps the coating hold.)
- 1 cup Marinara sauce (Use your favorite jar or homemade.)
- 8 slices Mozzarella (Slices melt nicely; shredded works too.)
- 4 rolls Hoagie rolls or sturdy sandwich buns (Roll choice matters, ensure they can handle sauce.)
- 1 tablespoon Olive oil (For frying, or spray oil if baking.)

Instructions
Preparation
- Pat the chicken cutlets dry.
- Set up the breading station with three bowls: one for flour mixed with a pinch of salt and pepper; one for beaten eggs; and the third for breadcrumbs mixed with parmesan and Italian seasoning.
Cooking the Chicken
- Bread the chicken by going through the flour, then the egg, and finally the breadcrumbs. Press crumbs gently into the chicken.
- If frying, heat oil in a skillet and shallow fry the chicken for 3 to 4 minutes per side until golden brown and cooked through.
- If baking, place the breaded chicken on a wire rack over a sheet pan, spray the top with oil, and bake at 425°F until crisp, remembering to flip once halfway.
Assembling the Sandwich
- Toast the hoagie rolls by splitting and placing them on a baking sheet until slightly crisp.
- Layer the sandwich starting with the roll bottom, followed by chicken, a spoon of warm marinara, mozzarella cheese, and a sprinkle of parmesan.
- Pop the open-faced sandwiches back into the oven until the cheese melts, approximately 4 to 6 minutes. Optionally, switch to broil for one minute to brown the cheese.
- Add the top bun and let the sandwich sit for a minute before serving.
Notes
For variations, consider adding red pepper flakes to the marinara, a layer of pesto on the roll, or using panko for extra crunch. Store leftovers separately to maintain crispiness.
