Description

A cozy and filling breakfast casserole made with sweet potatoes, eggs, cheese, and your choice of protein, perfect for busy mornings or leisurely weekends.


Ingredients

Base Ingredients

  • 2 medium to large sweet potatoes, peeled and diced (Roast for best flavor)
  • 8-10 large eggs (Use according to dish size)
  • 1/3 cup milk (Any kind works)
  • 1-2 cups shredded cheese (Choose your favorite)
  • protein (sausage, turkey, ham, bacon, or plant-based crumbles) (Cook before adding to casserole)

Vegetables

  • onions and peppers (Cooked before adding)

Seasonings

  • to taste salt
  • to taste pepper
  • to taste garlic powder
  • to taste paprika
  • a pinch chili flakes (Optional, for heat)


Instructions

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. If desired, roast diced sweet potatoes with olive oil, salt, and pepper at 425°F for 18 to 25 minutes.
  3. Whisk the eggs with milk, salt, pepper, garlic powder, and onion powder until fully blended.
  4. Cook your chosen protein until browned, then drain off excess grease.

Assembly

  1. Grease a 9×13 baking dish with oil or butter.
  2. Layer in roasted or diced sweet potatoes.
  3. Add cooked protein and any cooked veggies.
  4. Sprinkle a layer of cheese over the top.
  5. Pour the whisked egg mixture over all layers.
  6. Top with more cheese for a golden finish.

Baking

  1. Bake for 30 to 40 minutes, until the center is set and does not jiggle.
  2. If the top browns too quickly, cover with foil for the last 10 minutes.
  3. Allow to rest for 10 minutes before slicing.

Notes

Caserole can be easily customized with different proteins and vegetables. Make ahead and refrigerate overnight or freeze for later use. Reheat gently to maintain texture.
