A fresh and flavorful slaw that combines crunchy cabbage, spicy jalapeños, creamy chipotle dressing, and the irresistible crunch of Chili Cheese Fritos, perfect for busy weeknights.
Ingredients
For the Slaw
- 4 cups shredded cabbage or coleslaw mix (Pat dry if it looks wet)
- 1 cup sweet corn (Can be fresh, canned, or frozen and thawed)
- 1 can black beans (Drain and rinse well)
- 1 each jalapeño (Thinly sliced; use pickled for a milder option)
- 1 cup Chili Cheese Fritos (Add just before serving)
For the Dressing
- 1/2 cup mayonnaise
- 1/3 cup sour cream or Greek yogurt
- 2-3 teaspoons adobo sauce from chipotle peppers (Adjust for desired heat)
- 1 teaspoon honey
- 1 teaspoon lime zest
- 1 tablespoon lime juice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder

Instructions
Preparation
- In a bowl, whisk together all the dressing ingredients until smooth.
- In a large mixing bowl, add the shredded cabbage.
- Toss in the corn, black beans, and jalapeños.
- Pour on half of the dressing and toss to coat the slaw.
- Adjust with more dressing until the slaw is glossy but not soupy.
Serving
- Right before serving, fold in the Chili Cheese Fritos and save a few for sprinkling on top.
- Taste and adjust salt, pepper, and lime juice as needed.
- Serve immediately for the best crunch.
Notes
Keep the beans and corn dry to prevent sogginess. For meal prep, store the dressing separately and combine just before serving. Keep chips in a separate container until ready to serve.
