Description
A simple, hands-off recipe for juicy chicken breasts made in a slow cooker, perfect for meal prep and versatile for various dishes throughout the week.
Ingredients
Main Ingredients
- 2-3 pounds Boneless skinless chicken breasts
- 1 cup Chicken broth (Or water in a pinch)
- 2 tablespoons Olive oil (Helps with texture and flavor)
- to taste Salt
- to taste Pepper
Seasonings
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Paprika (Adds color and mild warmth)
- optional Italian seasoning or dried thyme (Optional for added flavor)
- optional Lemon juice (A squeeze at the end for brightness)
Instructions
Preparation
- Lightly grease the slow cooker or add a liner if you use those.
- Add the chicken breasts in a single layer if possible. If they overlap slightly, it’s still fine.
- Stir your seasonings together and sprinkle them over the chicken on both sides.
- Pour in the broth around the chicken, not directly on top.
- Drizzle olive oil over the chicken.
- Cover and cook on Low for 2.5 to 4 hours or on High for 1.5 to 2.5 hours.
- Check for doneness with a meat thermometer. The chicken should reach 165°F in the thickest part.
- Let the chicken rest for 5 minutes before slicing or shredding.
Notes
For meal prep, this chicken can be shredded and stored in the cooking juices. It pairs well with roasted veggies, rice, wraps, or salads. Store in an airtight container for up to 4 days in the fridge or freeze for 2-3 months.
