Description

A super easy slow cooker recipe that yields juicy and tender chicken breasts perfect for any meal, whether it’s dinner or lunch.


Ingredients

Main Ingredients

  • 1.5 to 2 pounds Boneless skinless chicken breasts
  • 0.5 to 0.75 cups Chicken broth (or stock, enough to cover the bottom of the slow cooker)
  • 1 tablespoon Olive oil (optional but nice)
  • to taste teaspoons Salt
  • to taste teaspoons Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika (sweet or smoked)

Optional Add-Ins

  • to taste Lemon slices
  • to taste tablespoons Soy sauce (a splash)
  • to taste teaspoons Italian seasoning
  • to taste spoons Dijon mustard


Instructions

Preparation

  1. Lightly grease the slow cooker insert or add a tiny splash of oil.
  2. Pour in chicken broth, just enough to cover the bottom, usually 1/2 to 3/4 cup.
  3. Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and paprika.
  4. Lay the chicken in a single layer if possible.

Cooking

  1. Cover and cook on LOW until the chicken is just cooked through, approximately 2.5 to 3.5 hours depending on thickness.
  2. Rest the chicken for 5 to 10 minutes, then slice or shred.

Notes

For best results, do not overcook; check earlier than you think, and ensure enough liquid without submerging the chicken. Allow the chicken to rest before cutting for juiciness.
