A super easy slow cooker recipe that yields juicy and tender chicken breasts perfect for any meal, whether it’s dinner or lunch.
Ingredients
Main Ingredients
- 1.5 to 2 pounds Boneless skinless chicken breasts
- 0.5 to 0.75 cups Chicken broth (or stock, enough to cover the bottom of the slow cooker)
- 1 tablespoon Olive oil (optional but nice)
- to taste teaspoons Salt
- to taste teaspoons Black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Paprika (sweet or smoked)
Optional Add-Ins
- to taste Lemon slices
- to taste tablespoons Soy sauce (a splash)
- to taste teaspoons Italian seasoning
- to taste spoons Dijon mustard
Instructions
Preparation
- Lightly grease the slow cooker insert or add a tiny splash of oil.
- Pour in chicken broth, just enough to cover the bottom, usually 1/2 to 3/4 cup.
- Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and paprika.
- Lay the chicken in a single layer if possible.
Cooking
- Cover and cook on LOW until the chicken is just cooked through, approximately 2.5 to 3.5 hours depending on thickness.
- Rest the chicken for 5 to 10 minutes, then slice or shred.
Notes
For best results, do not overcook; check earlier than you think, and ensure enough liquid without submerging the chicken. Allow the chicken to rest before cutting for juiciness.
