Description

A cozy and flavorful slow cooker recipe featuring tender beef and buttery garlic potatoes, perfect for easy family dinners.


Ingredients

Main Ingredients

  • 1.5-2 pounds Beef stew meat or cubed chuck roast
  • 1 pound Baby potatoes or Yukon Gold potatoes
  • 1/2 cup Butter (Cannot substitute with margarine for best flavor.)
  • 4 cloves Garlic, minced (Jarred garlic can be used.)
  • 3/4-1 cup Beef broth (Use water and Worcestershire sauce as a substitute if needed.)
  • to taste Salt and pepper
  • 1 teaspoon Paprika or Italian seasoning (Optional but recommended.)
  • to garnish Fresh parsley (Optional for a fancier presentation.)


Instructions

Preparation

  1. Wash the potatoes and cut the larger ones in half.
  2. Season the beef with salt, pepper, and paprika or Italian seasoning.
  3. Place the potatoes in the bottom of the slow cooker, then add the seasoned beef on top.
  4. Melt the butter and stir in the minced garlic. Pour the garlic butter over the beef and potatoes.
  5. Add enough beef broth to keep the mixture moist, usually about 3/4 to 1 cup.
  6. Cook on low for 6 to 8 hours or high for 3 to 4 hours until the beef is tender.
  7. Taste and adjust seasoning if needed, then serve topped with fresh parsley.

Notes

Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Reheat with a splash of broth if needed.
