- 1.5-2 pounds Beef stew meat or cubed chuck roast
- 1 pound Baby potatoes or Yukon Gold potatoes
- 1/2 cup Butter (Cannot substitute with margarine for best flavor.)
- 4 cloves Garlic, minced (Jarred garlic can be used.)
- 3/4-1 cup Beef broth (Use water and Worcestershire sauce as a substitute if needed.)
- to taste Salt and pepper
- 1 teaspoon Paprika or Italian seasoning (Optional but recommended.)
- to garnish Fresh parsley (Optional for a fancier presentation.)
Instructions
Preparation
- Wash the potatoes and cut the larger ones in half.
- Season the beef with salt, pepper, and paprika or Italian seasoning.
- Place the potatoes in the bottom of the slow cooker, then add the seasoned beef on top.
- Melt the butter and stir in the minced garlic. Pour the garlic butter over the beef and potatoes.
- Add enough beef broth to keep the mixture moist, usually about 3/4 to 1 cup.
- Cook on low for 6 to 8 hours or high for 3 to 4 hours until the beef is tender.
- Taste and adjust seasoning if needed, then serve topped with fresh parsley.
Notes
Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Reheat with a splash of broth if needed.
