Ingredients

Pancake Batter

  • 1 cup All-purpose flour (For structure)
  • 2 teaspoons Baking powder (Plus a pinch of baking soda if using buttermilk)
  • 2 tablespoons Sugar (Just enough for balance)
  • 1/2 teaspoon Salt (To enhance flavor)
  • 1 cup Buttermilk (Or milk with a splash of lemon)
  • 1 large Egg (For richness and binding)
  • 2 tablespoons Melted butter (Or any neutral oil)
  • 1 cup Grated or finely diced apple (Honeycrisp or Granny Smith works well)
  • 1 teaspoon Apple pie spice (Or cinnamon plus a tiny pinch of nutmeg)

Apple Cinnamon Topping

  • 1 tablespoon Butter (For sautéing apples)
  • 2 cups Peeled sliced apples
  • 1 tablespoon Brown sugar (To sweeten the apples)
  • 1/2 teaspoon Cinnamon (For flavor)
  • 1 tablespoon Water (To help cook the apples)


Instructions

Pancake Preparation

  1. In a bowl, whisk flour, baking powder, sugar, salt, and apple pie spice.
  2. In another bowl, whisk buttermilk, egg, and melted butter.
  3. Pour wet ingredients into dry ingredients and stir gently. Stop when you still see a few flour streaks.
  4. Fold in grated or finely diced apple.

Cooking the Pancakes

  1. Heat a skillet on medium, grease lightly, and pour batter to desired size.
  2. Flip when bubbles form and edges look set; cook the other side until golden.

Making the Apple Topping

  1. In a small pan, melt butter, add peeled sliced apples.
  2. Mix in brown sugar, cinnamon, and splash of water. Cook for about 6 to 10 minutes until apples soften and sauce becomes glossy.
  3. Add more water if sauce becomes too thick.
