Ingredients

For the popsicles

  • 2 cups fresh strawberries (Can substitute with frozen strawberries)
  • 2 cups ripe mango (Fresh or frozen works well)
  • 1/2 cup plain Greek yogurt (Optional for creaminess)
  • 1 tablespoon lime juice (Just a squeeze to enhance flavors)
  • 1 tablespoon honey or maple syrup (Optional, only if needed)
  • splash water, coconut water, or milk (Only if the blender needs help)


Instructions

Preparation

  1. Wash and hull the strawberries. Peel and chop the mango.
  2. Blend strawberries with a squeeze of lime. Taste it, and if it is too tart, add a little honey or maple syrup. If the blender struggles, add a small splash of water.
  3. Pour the strawberry mixture into a container or bowl.
  4. Blend mango with a squeeze of lime. Taste it; mango usually does not need extra sweetener.

Assembly

  1. Fill your popsicle molds with the strawberry mixture. You can create layers if desired.
  2. Insert sticks and freeze for 5 to 6 hours or overnight.
  3. To release them, run the mold under warm water for about 10 to 15 seconds and gently wiggle.

Notes

For layered popsicles, freeze each layer for 20-30 minutes before adding the next for better definition. You can mix it up by using coconut milk for creaminess or adding lime zest for extra flavor.
