A light and creamy strawberry mousse that’s easy to make and doesn’t require gelatin. Perfect as a make-ahead dessert for any occasion.

- 2 cups Fresh strawberries, washed and hulled (Use ripe strawberries for better flavor.)
- 1/4 cup Granulated sugar or honey (Adjust to taste.)
- 1 tablespoon Lemon juice (Just a little, it enhances flavor.)
- 1 cup Heavy whipping cream, cold (Chill before use.)
- 1/4 cup Powdered sugar (Optional, for stabilizing and sweetness.)
- 1 teaspoon Vanilla extract (Optional, for flavor.)

Preparation
- Blend your strawberries with sugar and a little lemon juice until smooth. Taste to adjust sweetness if necessary.
- In a separate bowl, whip cold heavy cream until it holds soft peaks. If using powdered sugar and vanilla, add them while whipping.
- Add about one third of the whipped cream into the strawberry puree and stir to lighten it up. Then gently fold in the rest.
- Spoon the mixture into small cups or glasses and refrigerate for at least 2 to 4 hours, preferably overnight.
Notes
Chill your bowl and whisk if your kitchen is warm for better whipping. Do not overwhip the cream to avoid turning it into butter.
