Description

A light and creamy strawberry mousse that’s easy to make and doesn’t require gelatin. Perfect as a make-ahead dessert for any occasion.


Ingredients

  • 2 cups Fresh strawberries, washed and hulled (Use ripe strawberries for better flavor.)
  • 1/4 cup Granulated sugar or honey (Adjust to taste.)
  • 1 tablespoon Lemon juice (Just a little, it enhances flavor.)
  • 1 cup Heavy whipping cream, cold (Chill before use.)
  • 1/4 cup Powdered sugar (Optional, for stabilizing and sweetness.)
  • 1 teaspoon Vanilla extract (Optional, for flavor.)


Instructions

Preparation

  1. Blend your strawberries with sugar and a little lemon juice until smooth. Taste to adjust sweetness if necessary.
  2. In a separate bowl, whip cold heavy cream until it holds soft peaks. If using powdered sugar and vanilla, add them while whipping.
  3. Add about one third of the whipped cream into the strawberry puree and stir to lighten it up. Then gently fold in the rest.
  4. Spoon the mixture into small cups or glasses and refrigerate for at least 2 to 4 hours, preferably overnight.

Notes

Chill your bowl and whisk if your kitchen is warm for better whipping. Do not overwhip the cream to avoid turning it into butter.
