A sweet and savory slow cooker chicken dish with juicy pineapple, perfect for family dinners and meal prep. Easy to make and delicious as leftovers.


Ingredients

Main Ingredients

  • 2 lbs chicken thighs or breasts (Thighs are juicier and more forgiving.)
  • 1 cup canned pineapple chunks plus juice (Canned is totally fine.)
  • 1/2 cup soy sauce (Use tamari for gluten-free.)
  • 1/4 cup brown sugar (Adjust for low-sugar options.)
  • 2 tbsp ketchup or tomato sauce (Adds tanginess to the sauce.)
  • 2 cloves garlic (Fresh or jarred, no judgment.)
  • 2 tbsp rice vinegar or apple cider vinegar (Wakes up the flavors.)
  • 1 tbsp cornstarch (Optional for thickening sauce.)
  • 1 small bell pepper (Optional for additional veggies.)
  • 1 small onion (Optional for additional veggies.)


Instructions

Preparation

  1. Lightly grease your slow cooker or use a liner for easy cleanup.
  2. Add chicken in a single layer.
  3. Stir together pineapple (with some juice), soy sauce, brown sugar, ketchup, garlic, and vinegar in a bowl.
  4. Pour sauce over the chicken. Add peppers and onion if using.

Cooking

  1. Cook on low for 4 to 6 hours for thighs, or 3.5 to 5 hours for breasts, until chicken is tender.
  2. Optional: Thicken the sauce by mixing cornstarch with cold water and adding to the sauce. Cook on high for 10 to 15 minutes.
  3. Serve over rice and spoon extra sauce over everything.

Notes

Best served with steamed jasmine rice or coconut rice. Leftovers make excellent rice bowls, wraps, or tacos.
