Ingredients
For the base
- 1 cup unsalted butter, divided (1/2 cup softened, 1/2 cup cold and cubed)
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all purpose flour
- 1/2 teaspoon salt
For the filling
- 6 to 7 cups peeled, sliced apples (about 6 medium apples) (Granny Smith and Honeycrisp recommended.)
- 1 tablespoon lemon juice (Keeps apples bright.)
- 1/2 cup packed brown sugar
- 1 teaspoon cinnamon
- 1 to 2 tablespoons cornstarch (or flour) (Optional for thicker filling.)
For the streusel topping
- 1 cup all purpose flour
- 1/2 cup packed brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold butter (Cut into crumbs.)
Instructions
Preparation
- Preheat the oven to 350°F (175°C) and line a 9×13 inch pan with parchment paper.
- In a mixing bowl, cream softened butter and granulated sugar.
- Beat in eggs and vanilla extract, then stir in 2 cups flour and 1/2 teaspoon salt.
- Press the dough evenly into the prepared pan.
Make the Filling
- Toss sliced apples with lemon juice, brown sugar, cinnamon, and cornstarch.
Make the Streusel
- In a bowl, mix 1 cup flour, brown sugar, cinnamon, and salt.
- Cut in cold butter until mixture is crumbly.
Assembly and Baking
- Spread the apple mixture evenly over the base.
- Sprinkle the streusel topping evenly over the apples.
- Bake for 40 to 55 minutes until the top is golden and bubbly.
- Let the bars cool completely for at least 2 hours before slicing.
