Ingredients
Chicken and Marinade
- 2 pieces boneless, skinless chicken breasts (or 4 thin cutlets)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice (or lime juice)
- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- 1 teaspoon paprika
- to taste salt and black pepper
Bread, Cheese, and Toppings
- 4 pieces brioche buns, ciabatta rolls, or sturdy sandwich rolls
- 4 slices cheese (provolone, pepper jack, cheddar, or mozzarella)
- to taste lettuce
- to taste tomato
- to taste pickles
- to taste red onion
Sauce
- 1 tablespoon mayo
- 1 teaspoon Dijon mustard (optional hot sauce too)
Instructions
Preparation
- Pound or slice the chicken to an even thickness.
- Mix olive oil, lemon juice, garlic, paprika, salt, and pepper to create the marinade.
- Coat the chicken in the marinade and let it sit for at least 20 minutes or up to 4 hours in the refrigerator.
- Preheat the grill or grill pan over medium-high heat.
Cooking
- Grill the chicken until fully cooked and juices run clear, about 6-8 minutes, depending on thickness.
- In the last minute, add a slice of cheese to melt over the chicken.
- Toast the buns cut-side down on the grill for 30-60 seconds.
Assembly
- Spread sauce on both cut sides of the buns.
- Layer with lettuce, the grilled chicken, tomato, pickles, and onions.
- Press the sandwich gently together and serve warm.
Notes
Let the chicken rest for 3 to 5 minutes after grilling to keep it juicy. You can customize the toppings and sauces as per your preference.
