Ingredients

Chicken and Marinade

  • 2 pieces boneless, skinless chicken breasts (or 4 thin cutlets)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (or lime juice)
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon paprika
  • to taste salt and black pepper

Bread, Cheese, and Toppings

  • 4 pieces brioche buns, ciabatta rolls, or sturdy sandwich rolls
  • 4 slices cheese (provolone, pepper jack, cheddar, or mozzarella)
  • to taste lettuce
  • to taste tomato
  • to taste pickles
  • to taste red onion

Sauce

  • 1 tablespoon mayo
  • 1 teaspoon Dijon mustard (optional hot sauce too)


Instructions

Preparation

  1. Pound or slice the chicken to an even thickness.
  2. Mix olive oil, lemon juice, garlic, paprika, salt, and pepper to create the marinade.
  3. Coat the chicken in the marinade and let it sit for at least 20 minutes or up to 4 hours in the refrigerator.
  4. Preheat the grill or grill pan over medium-high heat.

Cooking

  1. Grill the chicken until fully cooked and juices run clear, about 6-8 minutes, depending on thickness.
  2. In the last minute, add a slice of cheese to melt over the chicken.
  3. Toast the buns cut-side down on the grill for 30-60 seconds.

Assembly

  1. Spread sauce on both cut sides of the buns.
  2. Layer with lettuce, the grilled chicken, tomato, pickles, and onions.
  3. Press the sandwich gently together and serve warm.

Notes
