These colorful, creamy veggie pinwheels are an easy and fun appetizer perfect for parties and gatherings.
Ingredients
For the spread
- 8 ounces cream cheese, softened (Make sure the cream cheese is softened for easier spreading.)
- 2-3 tablespoons sour cream or Greek yogurt (Optional, but adds creaminess.)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste Salt and pepper
For the pinwheels
- 4 large tortillas (Flour tortillas are easiest to roll.)
- 1 cup shredded carrots
- 1 cup bell pepper, diced small (Any color.)
- 1 cup cucumber, diced small (Seeds scooped out if very watery.)
- 1/2 cup green onions, thinly sliced (Highly recommended for flavor.)
- 2 cups baby spinach, chopped (Or finely shredded lettuce.)
- 1 cup shredded cheese, optional (Cheddar or mozzarella work well.)
- to taste garlic powder, onion powder, salt, and pepper (Season to preference.)
Instructions
Preparation
- Chop all veggies small to ensure easy rolling and slicing.
- Make the spread by mixing cream cheese, sour cream (or yogurt), garlic powder, onion powder, salt, and pepper until smooth.
- Lay a tortilla flat and spread a thin, even layer of the cream cheese mixture all the way to the edges.
- Sprinkle the chopped veggies evenly across the tortilla and press them gently into the spread.
- Roll the tortilla tightly, ensuring it is snug but not so tight that the filling spills out.
- Wrap the roll in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Slice into 1-inch pinwheels using a sharp knife.
Notes
These roll ups can be made a day in advance and are best served chilled. Store leftovers in an airtight container for up to 3 days in the fridge.
